Doc's Draft Hard Apple Cider

This cider is semi-dry and wonderfully
effervescent with a remarkably fresh apple
nose. Its crisp, fruit forward taste and a clean,
refreshing finish, have won our cider countless
awards and praise. (4.5% alcohol)
Linderman's Pomme (Apple Lambic)
Pomme is made more like champagne
than beer, aged in oak casks and put up
in corked bottles. The result is a spritzy,
refreshing beverage, with a light body, a
bit of acidity, and a sweet-tart apple
flavor that cider drinkers will adore.

Cask Conditioning
Cask conditioned beer or cider  is brewed from traditional
ingredients, matured by secondary fermentation in the container
from which it is dispensed, and served without the use of
extraneous carbon dioxide.  The special cask of Doc's cider
being tapped on June 13th will be on the bar and
use gravity to pour.

"Cask conditioned" beer is often called
real ale. The
fundamental distinction between real and other ales is that the
yeast is still present in the container from which the beer is
served, although it will have settled to the bottom and is not
poured into the glass. Because the yeast is still alive, the
process of fermentation continues in the cask or bottle on the
way to the consumer ensuring a fresh and natural taste.
