Beef, port, and duck are sauteed and layered with mushroom duxelles and
orange butter encased in a puff pastry and baked golden brown. Present on
Mediterranean couscous, with asparagus and beef demi glace-orange sauce.

(Vegetarians- T-Toe Wellington)
T-Toe (tofu & panser cheese), cauliflower steak and roasted red bell pepper
are pan seared, layered with mushroom, duxelles, and orange butter encased in
puff pastry and baked golden brown.  Presented on Mediterranean couscous
with asparagus and roasted vegetable-orange sauce.
