Vegetarian Cooking With Beer
Here's my take on some healthy foods that pack
plenty of flavor.  Try these easy to cook recipes
and you won't be disappointed.  And of course,
don't forget my golden rule -
when in doubt use more beer!
Buffalo Cauliflower Wing Pizza with


for the tofu blue cheese spread
•½ block of extra firm tofu, crumbled into small pieces
•2 tablespoons nutritional yeast
•1 tablespoons vegenaise
•juice of 1 lemon
•3 teaspoons apple cider vinegar
•1 teaspoons white miso
•½ teaspoons tahini
•½ teaspoons garlic powder
•¼ teaspoons dried oregano
•¼ teaspoons dried marjoram
•¼ teaspoons kelp granules
•a few dashes of salt

•1 head cauliflower, broken into florets
•1 cup double IPA
•1 cup chickpea flour
•several dashes of garlic powder
•several dashes of smoked paprika
•¾ cup barbecue sauce (we used Organicville)
•1/4 cup Sriracha sauce (or other hot sauce)
•1 tablespoon arrowroot powder (or whatever starch you’ve got)
•1 teaspoon sea salt
•1/4 tsp black pepper

•1 cornmeal pizza crust (store-bought or homemade, gluten-free if necessary. I
used Viccolo brand.)
•1 recipe of Buffalo Cauliflower Wings
•1 recipe of Tofu Blue Cheese Spread

1.Place the tofu crumbles into a medium bowl. Add the rest of the ingredients
and stir to combine. Chill until ready to use. Enjoy!
2.*You may need to adjust the seasonings to fit your preferences. This was
slightly on the mild side for me.
-third of flour. Blend in the beer used to soak raisins, then fold in raisins.
7. Beat egg whites with electric mixer until soft peaks form.
8.  Beat in remaining 2/3 cup sugar until stiff peaks form. Fold egg whites into
batter. Spread batter in prepared pan, and bake 1 hour 20 minutes,
9.   Let stand 5 minutes. Run knife around pan sides, and turn cake out onto
rack. Peel off parchment paper, and turn cake right side up to cool completely.

3.Preheat oven to 450 degrees. Lightly grease or spray a glass 9 x 13
casserole dish with olive oil spray.
4.Whisk IPA beer, chickpea flour, garlic powder, and paprika together. Dredge
cauliflower pieces into flour mixture and place in the casserole dish. Bake at
450 degrees for 20 minutes.
5.Meanwhile, mix together the BBQ sauce, Sriracha sauce, arrowroot, salt and
6.Once cooked, toss cauliflower with BBQ mix and bake for an additional 5 to 8
minutes. Remove from heat and serve hot (or use on pizza). Enjoy!
Big Game Cheese Dip in Bread Bowl

1 round loaf (1 pound) pumpernickel bread
2 jars (5 ounces each)
sharp soy cheese spread
1 package (8 ounces)
veggie cream cheese, softened
1/3 cup strong beer
1/2 cup imitation bacon bits

Cut top fourth off loaf of bread; carefully hollow out bottom,
leaving a 1/2-in. shell. Cube removed bread; set aside.  
2.  In a microwave-safe bowl, combine cheese spread
and cream cheese.
3. Microwave, uncovered, on high for 2 minutes,
stirring every 30 seconds.
4. Stir in beer. Microwave, uncovered, 20 seconds longer.
5. Stir in imitation bacon.  
6..  Fill bread shell with cheese dip. Serve with reserved bread cubes.

Yield: 2-1/2 cups.
Garlic Parmesan Tempeh Wings

for the marinade
•1 8oz block of tempeh
•1/2 cup milk stout
•juice of 1/2 a lemon
•4 cloves garlic, minced
•1 teaspoon onion powder
•1 teaspoon dried thyme
•1 teaspoon dried oregano
•1/2 teaspoon dried marjoram
•1/2 teaspoon sea salt

for assembly
•1/2 cup arrowroot powder
•2 teaspoons garlic powder
•1 cup pecan parmesan

1.Cut the tempeh into 10 strips, widthwise.
Combine the marinade ingredients in a shallow dish.
2.  Add the tempeh, taking care to cover all sides with marinade. Cover and place
the dish in the refrigerator to marinate for at least 1 hour, up to overnight.
3.Preheat the oven to 350. Line a baking sheet with parchment paper.
3.On a plate, combine the arrowroot and garlic powder.
Place the pecan parmesan on another plate.
4.One by one, remove 1 tempeh strip from the marinade, dredge in the arrowroot
powder, then dip back into the marinade. Shake off any excess.
5.  Then place the strip in the pecan parmesan and coat. Lay the parmesan-
coated tempeh strip on the prepared baking sheet.
Continue until all strips are on the baking sheet.
6 .Bake the tempeh for 15 minutes, flipping once halfway through to allow
for even cooking. Serve warm. Enjoy!
