| "Here and There" by Clay Moore and Jay Silvers Before hops get a name they have a number. One new hop, XJA2/436 is ready to break out. It's from South Africa and has tropical fruit sweetness, notably papaya. It is gaining traction for use in juicy IPAs. One of our favorite beers on a cold winter day (and most other days) is St. Bernardus Abt12. It features a luscious caramel, toffee, chocolate, and raisin notes. Give it a try especially with some quality cheese. Gooooood!. Still got some fruitcake left over from the holidays? Here's tip to make it palatable. Soak it for an hour or two in a strong ale. We like Old Jubilation for this but most any high ABV dark ale will be fine. Bourbon barrel wine also works. Try this beer cocktail when you want something different that's still has beer - take 1.5 oz. of your favorite Irish Whiskey, over ice mix in 1 oz. of lemon juice, a tablespoon of honey, 4 oz. of any strong pale ale, and a dash of bitters. Top with a layer of the ale. Finish the can if any is left over. We've really gotten into double or imperial IPAs lately. The terms refer to any IPA over 8%. It's merely a term to designate strength and maybe combined with other types of IPA so you may see things like double rye IPA, imperial white IPAs, or double black IPAs. There are even triple IPAs out there. Be aware that to get this higher alcohol content the brewer uses more malt so the beer might be a touch sweeter than your regular IPA regardless of its IBUs. A "Tut" is the weakened center of a cask keystone, designed to be punctured by the tap or spigot when the cask is tapped. If the keystone is plastic the tut is made of thinner plastic. If it's wood,it is precut to facilitate the taps' punching through. “Beer, if drunk in moderation, softens the temper, cheers the spirit and promotes health.” Thomas Jefferson Acetaldehyde is a chemical and bi product of fermentation that is perceived as green apples in both aromas and flavor. If you taste this off flavor send the beer back. If it's in a homebrew be nice and tell the brewer it was "interesting". A friend of ours doesn't wear glasses.... he just empties them. Quiz Time- . They are unmalted grain or other fermentable ingredients. Adjuncts used are typically rice or corn, and can also include honey, syrups, and numerous other sources of fermentable carbohydrates. It's a single-hopped, dry- hopped West Coast IPA before there was such a thing as West Coast IPAs (it was first released in 1975), Liberty Ale still features Cascade hops. Perhaps the only way the beer's changed in the last 40+ years is that it's currently available in cans. The pandemic has cost many jobs in the beer industry. Interestingly Anheuser- Busch (AB InBev) a global beer-making conglomerate still employees more people than the entire craft beer industry and that doesn't even include the hundreds of its employees that are horses.
