Vegetarian Cooking With Beer
Here's my take on some healthy foods that pack
plenty of flavor.  Try these easy to cook recipes
and you won't be disappointed.  And of course,
don't forget my golden rule -
when in doubt use more beer!
CHICKPEA and BEER CASSEROLE

INGREDIENTS
1/2 Tablespoon oil
1/2 cup light lager
2 large onions, sliced
3 garlic cloves, minced
3 cups cooked garbanzo beans
5 large tomatoes, peeled and diced
2 Tablespoons ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh coriander, chopped
Quick Cook Rice of your choosing

In a non-stick skillet, sauté onions and garlic in oil for about 3 minutes;
add the cooked garbanzos, tomatoes, beer, cumin, oregano, salt, and pepper.
Cook over medium heat for 20 minutes stirring frequently.
Prepare rice following directions on the box
Add the coriander and serve over the rice
Serves 8
Beer Baked Eggplant Parmesan

INGREDIENTS
3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
5 cups spaghetti sauce, divided
1 cup Imperial Red Ale
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil

Preheat oven to 350 degrees F (175 degrees C).
Dip eggplant slices in egg, then in bread crumbs.
Place in a single layer on a baking sheet.
Bake in preheated oven for 5 minutes on each side.
In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom.
Mix the remaining sauce and beer.
Place a layer of eggplant slices in the sauce.
Sprinkle with mozzarella and Parmesan cheeses.
Repeat with remaining ingredients, ending with the cheeses.
Sprinkle basil on top.
Bake in preheated oven for 35 minutes, or until golden brown.
Zucchini Beer Cakes

INGREDIENTS
2 1/2 cups grated zucchini
1 egg, beaten
2/3 cup English Ale
2 tablespoons butter, melted
1  1/4 cup bread crumbs
1/2 cup minced onion
1 teaspoon Old Bay Seasoning
1/4 cup all-purpose flour
1/2 cup vegetable oil for frying


In a large bowl, combine zucchini, egg, beer, and butter .
Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
Shape mixture into patties. Dredge in flour.
In a medium skillet, heat oil over medium high heat until hot.
Fry patties in oil until golden brown on both sides
Serve as you would a traditional crab cake.
Give these recipes a try and you won't be
disappointed.  They are quick, easy, and fun to cook.  
And remember, when in doubt just use more beer!
