|Here's my take on some healthy foods that pack
plenty of flavor. Try these easy to cook recipes
and you won't be disappointed. And of course,
don't forget my golden rule -
when in doubt use more beer!
4 Tbsp. extra-virgin olive oil
1/4 cup unbleached all purpose flour
1/4 tsp. salt
1/8 tsp. pepper
4 vegan "chicken" cutlets
1 cup thinly sliced red onions
1 cup thinly sliced baby bella mushrooms
1/2 cup pale ale
1/4 cup stout or vegetable broth
4 Tbsp. nonhydrogenated margarine
In medium saute pan heat olive oil
In shallow bowl mix the flour, salt and pepper. Dredge each cutlet in the flour
mixture and saute until golden brown on both sides.
Remove from pan; set aside
Add 1 more Tbsp. of oil to the pan and saute the onions for 3 minutes, then add
mushrroom. Cook for 3-5 minutes, stirring occasionally.
Add the beer and stir, scraping the bottom of the pan. Continue cooking until
the beer is reduced by 1/4. Add the stout (or broth) and reduce by 1/4. Turn off
heat and vigorously whisk in margarine.
Serve over "chicken" cutlets
2 cups whole-wheat flour
¾ cup raisins
1 teaspoon cinnamon
½ teaspoon baking soda
1 pale ale
1/3 cup oil
½ cup sorghum or corn syrup
1 teaspoon vanilla
preheat the oven to 400 degrees and grease a cookie sheet.
Next, mix the wet ingredients together.
At the same time, mix the dry ingredients in a separate bowl.
Then, combine all ingredients in one bowl.
Place heaping spoonfuls onto the greased sheet
bake for approximately 20 minutes
|Beer Bran Burgers
1 cup Fiber One® original bran cereal
1 can (15 or 16 oz) spicy chili beans in sauce, undrained
1/2 cup quick-cooking oats
1/4 cup chopped green onions (4 medium)
1 cup strong ale or double IPA
5 whole wheat burger buns, split
1 1/4 cups washed fresh baby spinach leaves
5 slices tomato
Place cereal in resealable food-storage plastic bag;
seal bag and crush with rolling pin or meat mallet.
In medium bowl, mash beans with fork until no whole beans remain.
Add cereal, oats, onions and beer; mix well.
Shape mixture into 5 patties, each about 3 1/2 inches in diameter.
Spray 12-inch skillet with cooking spray.
Add patties; cook over medium heat about 10 minutes,
turning once, until brown.
For each sandwich, place 1/4 cup spinach leaves and 1 tomato slice
on bottom half of bun; top with beer burger and top half of bun.
