Vegetarian Cooking With Beer
Here's my take on some healthy foods that pack
plenty of flavor.  Try these easy to cook recipes
and you won't be disappointed.  And of course,
don't forget my golden rule -
when in doubt use more beer!
Oktoberfest in a Slow Cooker
(Serves six)

INGREDIENTS

2 lb of Tofurky Kielbasa or vegetarian sausage
cut into 3-inch pieces
one 32 oz. jar sauerkraut
1/2 cup brown sugar
1 tablespoon caraway seeds
2 russet potatoes, peeled and cut into 1-inch cubes
2/3 cup Oktoberfest beer
1 medium yellow or white onion, sliced


Wash, peel and slice veggies, then layer in a casserole. Fill dish to capacity.

Between each layer, pour soup and beer then sprinkle with spices.

Cover and cook in the oven
at 350F for 40-50 minutes
While that cooks, prepare the veggie kielbasa......

1. In a medium bowl, combine the sauerkraut, brown sugar,
caraway seeds, potatoes and beer. Place in slow cooker.

2. Cook on high three hours.  Lift the lid and check to see whether the
mixture is drying out, add more beer if necessary.

3. Reduce the heat to low setting, and add the "kielbasa" (or sausage) over the
sauerkraut and sprinkle with onion. Cook on low for 45 minutes.

Guinness Bangers and Cheesy Onion Mash

INGREDIENTS

Guinness Bangers:

2 t olive oil
1 12 oz package vegetarian Italian-style sausage (4 sausages)
1 pint, 6 oz bottle of Guinness Extra Stout
1/2 white onion, diced

Cheesy Onion Mash:

2 large potatoes, peeled and diced
1/4 white onion, diced
1/4 cup heavy cream
1/4 cup asagio cheese, shredded (or use white cheddar)
1 1/2 T butter (try Smart Balance instead)
2 T flat leaf parsley, minced
sea salt, to taste

In a saute pan, heat olive oil on medium high heat. Add
vegetarian sausage and brown on all sides.

Add Guinness and onions and turn heat to low.

Cover and braise for 50 minutes.

In large pot, place potatoes and onions and pot and bring to boil.

Continue to boil until potatoes and onions soften. Drain and place
in large bowl.

Add cheese, butter and heavy cream. With potato masher, mash
potatoes until smooth.

Add parsley and stir to combine into potatoes. If you desire
creamier potatoes, use a hand mixer after hand mashing.

Remove sausage from pan and serve with mashed potatoes. Feel
free to use some of the sauce from the pan to drizzle over the
potatoes and sausage.
Give these recipes a try and you won't be
disappointed.  They are quick, easy, and fun to cook.  
And remember, when in doubt just use more beer!
